Scotch Pancake Recipe Start your pancakes by placing the butter into a non-stick pan and add the buttermilk. Heat gently, but don’t boil, the buttermilk must be just warm enough to melt the butter.

Put the flour into a roomy baking bowl, and once the butter is melted into the buttermilk, slowly pour into the flour whilst whisking continuously. Once all the butter and milk is added, beat the mixture very well to get rid of any lumps and so leave the mixture to square for a minimum of a 30 minutes—if you’ll leave it longer than that, even better.

 

Ingredients

  • 15 fl oz./450 mL buttermilk
  • 9 oz./275 g flour (all-purpose/plain)
  • 3 oz./55 g butter
  • 2 eggs
  • 75 g sugar
  • 1.5 tsp. baking soda
  • Salt to taste
  • 1/2 tbsp. vinegar
 

Method

Step 1

Start your pancakes by placing the butter into a non-stick pan and add the buttermilk. Heat gently, but don't boil, the buttermilk must be just warm enough to melt the butter.

Step 2

Put the flour into a roomy baking bowl, and once the butter is melted into the buttermilk, slowly pour into the flour whilst whisking continuously. Once all the butter and milk is added, beat the mixture very well to get rid of any lumps and so leave the mixture to square for a minimum of a 30 minutes—if you'll leave it longer than that, even better.

Step 3

Pour the beaten eggs into another bowl and stir within the sugar, bicarbonate of soda and vinegar.

Step 4

Once added, stir this mixture into the well-rested flour, butter and buttermilk mixture. Beat well to make a smooth, lump-free batter.

Step 5

Using a little butter or oil , grease a griddle, hot-stone or a heavy-based pan. Heat over a medium to high heat until very, very lightly smoking. Drop the batter, one tablespoon at a time on to the heated griddle/pan/stone and cook the pancake until golden brown on each side . Once cooked through, remove them from the pan and keep warm. Continue with the remaining batter until it's all spent .

Step 6

Serve the Scotch pancakes spread with a bit butter while the pancakes are warm and luxuriate in as a dish on your breakfast, or serve with jam or honey as a part of your tea .
